What is apple cider vinegar?
Apple cider vinegar (ACV, or cider vinegar) is a vinegar made from fermented apple juice, used in cooking, drinks, and home remedies. Willy's organic apple cider vinegar takes this a step further — it's raw, unpasteurised, and unfiltered, leaving the "Mother" culture beautifully alive and present in every bottle.
What is Willy's Apple Cider Vinegar, and where does it come from?
Willy's ACV is made from apples grown at Mother Farm in Herefordshire, in heritage orchards that have been cultivated for over 300 years. These older trees produce fruit with real depth of flavour, shaped by centuries of natural growing conditions.
Are the apples picked, or do they fall naturally?
They fall naturally. Willy's ACV is made only from apples that ripen and drop from the tree on their own, rather than being picked early, so the fruit is always fully ripe before use.
Why are the fallen apples left on the ground?
Once fallen, the apples rest on the orchard floor for around two weeks. During this time, natural sugars continue to develop and the flavour in the skins deepens — a key step before pressing.
How is Willy's ACV made?
After resting, the apples are pressed and fermented using traditional methods. This creates a raw, unfiltered, unpasteurised organic apple cider vinegar, with nothing added to speed the process up or strip anything out.
What is the "Mother," and why is Willy's different?
The Mother is a living culture of yeast, bacteria, enzymes, and proteins formed during fermentation. You'll see her at the bottom of the bottle as a cloudy, strand-like form. The Mother is only found in raw, unpasteurised vinegars like Willy's ACV — she's full of gut-friendly probiotics such as acetic acid bacteria, so there's no need to be put off by her. Many other ACV brands have a "dead" mother, which shows up as a dusty, inactive sediment rather than a living culture.
What does SCOBY mean?
SCOBY stands for Symbiotic Culture Of Bacteria and Yeast — the scientific term for the same living culture known as the "Mother" in apple cider vinegar.
What are the healthy, gut-friendly bacteria in ACV?
These are probiotics — live bacteria and yeasts that are good for you, particularly for supporting your digestive system.
Is apple cider vinegar a probiotic?
Yes. Willy's organic apple cider vinegar is a live probiotic food, thanks to its fermentation process and active Mother culture. It's made from apples grown without artificial pesticides or fertilisers, letting natural farming practices do the work.
Why does the acidity level matter, and is Willy's ACV very acidic?
Willy's ACV is bottled at 5% acidity — strong enough to preserve the vinegar and keep it shelf-stable, but gentle enough to keep the Mother alive and active in every bottle. It's only mildly acidic overall, as alkaline nutrients from the apples (like potassium, calcium, and magnesium) help balance the acidity, making it gentler than vinegars such as white wine vinegar.
What's in Willy's ACV nutritionally?
Willy's ACV is very low in everything besides its natural acidity, containing just 0.1g of salt per serving.
How do you use ACV?
Because Willy's ACV includes the Mother, give the bottle a shake before use to activate her (this doesn't apply to the dosing bottles). You can dilute it in warm water, mix it into smoothies or other drinks, use it as a salad dressing, or add it into a meal. Some people also use it for steam facials, as a hair rinse, or as an addition to bathwater.
When is the best time to use ACV?
For appetite reduction, we recommend having it before food, first thing in the morning — always diluted with plenty of warm or cold water if drinking on an empty stomach. Taken with meals instead, it can help delay digestion and support a feeling of fullness for longer.
How is apple cider vinegar linked to the keto diet?
ACV is keto-friendly and low in carbohydrates, making it a good fit for a keto diet. Try adding it to water for flavour, or using Willy's ACV as a salad dressing.
Is Willy's Apple Cider Vinegar suitable for vegans?
Yes. It's also gluten-free and free from GMO ingredients.
Where should you store your Willy's ACV?
Store it in a cool, dark place — your pantry or kitchen counter works well, and it's nice to have somewhere visible!
What should I do if there isn't much Mother in my bottle?
Pop the bottle somewhere warmer, such as an airing cupboard. This will help speed up the development of the Mother culture.
What is the shelf life of Willy's ACV?
Willy's organic apple cider vinegar (1000ml and 50ml) lasts up to 3 years — always check the use-by date on the packaging to be sure.
Can I recycle Willy's packaging?
Yes. Willy's glass bottles and 50ml shot bottles are both widely recyclable.
