Super-Easy Chocolate Mousse

Courtesy of Tabitha Tortyse: This recipe is so easy and it is the best I’ve ever found for chocolate mousse – easy, unpretentious, delicious. No sugar of cream, it’s pretty low carb and you can use the chocolate you like best in terms of darkness/cocoa content, for the flavour you prefer.

Ingredients Per Person:

1 Good Free Range Egg
1 oz Butter (I use salted, it seems to give a better flavour)
1 oz Dark Chocolate

Separate the eggs.

Melt the chocolate and butter in a heatproof bowl over a pan of simmering water.

Remove from heat, allow to cool slightly and then stir in the egg yolks.

Whisk the egg whites until forming stiff peaks, gently fold into chocolate mixture, spoon into ramekins or wine glasses and chill.

Eat the same day as it tends to separate.

Optional: You can add a splash of strong black coffee or spirit of your choice (brand, liqueur – Bois Apricot Brandy is delicious) to the chocolate after melting it.
